Shrimp and Watercress Salad
Shrimp and watercress combine to make a fresh and vibrant cracker topping.

Ingredients
- 1 cup full-fat cottage cheese
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1/2 lemon, juiced
- 2 tablespoons chopped fresh chives, plus more for garnish
- 1 teaspoon salt
- 1/2 teaspoon finely ground black pepper
- Club® Original Crackers, for serving
- 2 cups fresh watercress, washed and ends trimmed
- 1 pound large shrimp, peeled, deveined and cooked
Directions
1. In food processor or blender, combine cottage cheese, mayonnaise, Dijon mustard, lemon juice, chives, salt and pepper. Blend until smooth and set aside. Cover and chill at least 30 minutes or until cold.
2. Onto each Club® Original Cracker spread a dollop of cottage cheese dip. Top each evenly with watercress and shrimp. Garnish with additional chives and serve.
Tip: Substitute prawns for shrimp if not available.
