Elote Corn Dip

The classic Mexican street food comes to life in easy to make street corn dip.

Ingredients

  • 4 ears of corn, husked
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup crumbled cotija cheese
  • 1/4 cup lime juice, plus more for garnishing
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon finely ground black pepper OR coarsely ground black pepper
  • 1/4 cup chopped fresh cilantro, plus more for garnishing
  • Club® Original Crackers

Directions

1. Preheat grill or grill pan over medium-high heat. Grill corn, turning occasionally, until lightly charred and tender, about 10 minutes. Remove from grill and let cool slightly before cutting kernels off cobs.

2. Combine sour cream, mayonnaise, cotija cheese, lime juice, cayenne, paprika, and garlic powder, salt and pepper in medium serving bowl until smooth. Add corn, reserving some for garnishing, and fold into dip.

3. Garnish with remaining corn, additional cilantro and lime juice. Serve with Club® Original Crackers.
