Asparagus and Goat Cheese Quiche

Asparagus and goat cheese combine with a buttery Club® crust to make the perfect quiche for brunch.

Ingredients

  • 2 cups Club® Original Crackers, finely crushed
  • 6 tablespoons unsalted butter, melted
  • 1 1/2 teaspoon salt, divided
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 5 large eggs
  • 1 1/2 cups whole milk
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley, plus more for garnish
  • 1/2 teaspoon finely ground black pepper

Directions

1. Preheat oven to 350°F. In large bowl, combine Club® Original Crackers, butter and 1/2 teaspoon of salt. Press mixture into the bottom and up sides of a 9-inch pie dish. Bake crust until it is set and lightly golden, about 8 to 10 minutes. Remove from oven and set aside.

2. In large skillet, heat olive oil over medium heat. Sauté asparagus for 2 to 3 minutes until tender and light golden-brown. Remove asparagus from heat and arrange in an even layer in prepared crust.

3. In large bowl, whisk together eggs and milk until smooth. Stir in goat cheese, chives, parsley, remaining salt and pepper. Pour mixture over asparagus in crust.

4. Bake until center is set and top is golden brown, about 35 to 40 minutes. Allow quiche to cool at least 10 minutes before slicing. Garnish with additional parsley and serve.
